Rita has taken Gabriella and Henry into her fold and has been so generous with her time and desire to dazzle H & G with traditional Piedmont food. Rita put me to work teaching me how to make an artichoke risotto. As with all of Rita's creations, there are a few steps!
And then, risotto! (Yes, there were a few more steps.)
Moving on to the antipasto, Polpettone di Tonno (a delicate tuna fish loaf)...It's a combination of tuna, boiled potatoes, parmigiana cheese, and an egg (or two).
The Polpettone di Tonno is served with some very tasty side side salsas made of capers and red peppers.
It is such a delightful, wonderful experience to have all of us come together from such vast parts of the world. The connection is such a gift. If our little microcosm could be repeated on a vast level, perhaps there could be more peace in this world.
