Dancing and Eating....

What wonderful guests we have had for the last few days--Henry and Gabriella. Our time has been action packed with traveling around the area (how kind of them to rent a car!), eating, laughter, and food catered by Rita.
Rita has taken Gabriella and Henry into her fold and has been so generous with her time and desire to dazzle H & G with traditional Piedmont food. Rita put me to work teaching me how to make an artichoke risotto. As with all of Rita's creations, there are a few steps!

Boiling artichoke leafs and sauteing artichoke hearts...
And then, risotto! (Yes, there were a few more steps.)
Moving on to the antipasto, Polpettone di Tonno (a delicate tuna fish loaf)...It's a combination of tuna, boiled potatoes, parmigiana cheese, and an egg (or two).

Presentation is everything!!
The Polpettone di Tonno is served with some very tasty side side salsas made of capers and red peppers.

The lucky guests with our wonderful hostess.

After our meal, it was time to dance and celebrate.
It is such a delightful, wonderful experience to have all of us come together from such vast parts of the world. The connection is such a gift. If our little microcosm could be repeated on a vast level, perhaps there could be more peace in this world.
